Measure 240 g of dry buckwheat. Transfer the buckwheat to a sieve and rinse under cold running water for about 30 seconds, shaking the sieve until the water runs clear. In a pot with a capacity of at least 2 l, bring 480 ml of water with 1 g of salt to a boil. Add the buckwheat to the boiling water, stir with a wooden spoon, reduce the heat to low, and cook covered for 12–15 minutes, until the water is absorbed and the grains are soft but fluffy. After cooking, remove the pot from the heat and let it sit covered for 5 minutes, then fluff the buckwheat with a fork.
