The dish combines the soft, buttery-nutty texture of avocado with the tartness of lemon and sorrel, along with hints of garlic and canola oil. Served on crispy crackers, it creates a contrast of textures — creamy paste and crunchy base — as well as a beautiful green decoration for the Easter table. As a regional twist, I added sorrel instead of typical herbs and optionally horseradish for a sharp, festive note. Perfect as an appetizer, a side for the holiday buffet, or a light snack for a spring gathering.

Check the ripeness of the avocado: gently press the fruit with your thumb — it should yield slightly but not be mushy. Cut the avocado in half around the pit, twist the halves, and remove the pit with a spoon. Scoop the flesh into a large bowl with a spoon. Place the cottage cheese on a sieve or lightly press it if it is very wet. Wash the sorrel in cold water, dry it with a paper towel, and chop it finely. Cut the lemon in half and squeeze the juice into a small bowl, removing the seeds.

Use a large, stable bowl and a sharp knife for the avocado. If the pit doesn't want to come out, hit it with the knife blade and gently pull it out (only if you are experienced).

In a bowl with the avocado flesh, add the cottage cheese and start mixing. First, mash the avocado with a fork to a relatively smooth consistency (you can leave small pieces for texture), then incorporate the cottage cheese to make the mixture uniform. Add a tablespoon of rapeseed oil and lemon juice. Squeeze the garlic: peel a clove of garlic, press it with your hand and lightly crush it with the flat side of a knife, then finely chop or press it through a garlic press and add it to the mixture.

Use a potato masher or a fork. If you prefer a very smooth paste, use an immersion blender on low speed. Do not blend for too long to avoid making the paste too watery.

Add the chopped sorrel and chives to the paste. Sprinkle in salt and pepper in the specified proportions. Gently mix everything with a spoon — stir from the center outwards for about 20–30 seconds, until the ingredients are evenly combined. Taste and adjust with additional lemon juice, salt, or pepper if needed.

Season gradually — avocado softens the flavor, but it's easy to oversalt. If the paste is too thick, add another half tablespoon of oil.

If you want a festive, spicy touch, add grated horseradish and mix with a teaspoon — start with a small amount (about 5 g) and adjust to taste. Additionally, you can thinly slice the radish and mix a few slices with the paste or leave them for decoration on the plate.

Horseradish is strong — it's better to add less at the beginning. Additionally, you can add horseradish to enhance the flavor/texture.

On a large platter, arrange the crackers in small groups. Spoon a portion of the spread (about 10–15 g of spread per cracker) onto each cracker. Sprinkle with finely chopped chives and slices of radish (if using). Arrange the plate aesthetically — the contrast of the green of the spread with the red of the radish and the golden color of the crackers looks particularly appealing on an Easter table.

For spreading, use a small spoon or a decorating spatula. The best crackers are those served just before serving to prevent them from becoming soggy.

Serve immediately, garnished with additional sorrel and a few drops of rapeseed oil. If serving later, cover the bowl with plastic wrap so that it touches the surface of the paste (to prevent the avocado from browning), and store in the refrigerator for up to 6 hours.
