Preparation steps

Bacon Chips

Prepare the bacon: lay the slices of bacon on a board and, if they are very thick, cut them in half lengthwise to get thin slices. Heat a large skillet (preferably cast iron or non-stick) over medium heat. When the skillet is hot, arrange the bacon slices in a single layer. Fry without adding any fat for 3–5 minutes on one side, until the fat renders and the edges become glossy-golden, then flip and fry for another 2–4 minutes, until the bacon is golden and crispy.

Use a pan with a diameter of 24–28 cm. Use kitchen tongs for flipping. Do not add too many slices at once — the chips should have space for the fat to drain freely. If the bacon starts to burn, reduce the heat.

When the slices are crispy, transfer them to a plate lined with paper towels to drain excess fat. Set the chips aside and leave about 1–2 tablespoons of fat from the pan in the pot — it will be useful for sautéing the onion for a more intense flavor in the soup.

A paper towel will quickly absorb excess fat and keep the chips crispy. Leave the fat in the pan to cool and then pour it into a saucepan, but do not discard it - it's the main source of flavor.

Cream soup

Prepare the vegetables: wash the zucchini, cut off the ends, and slice it into 1 cm thick rounds. If the zucchini is larger, cut the rounds in half. Peel the potatoes and dice them into about 1–1.5 cm cubes. Peel the onion and chop it finely. Crush the garlic with the side of a knife and chop it finely.

Use a sharp knife and a cutting board with a non-slip base. Even pieces will ensure even cooking. Young zucchini does not need to be peeled — the skin will add color and flavor.

Heat a medium saucepan (2–3 l) over medium heat. Add 15 g of rapeseed oil and 30 g of butter. When the butter melts and starts to foam slightly, add the chopped onion. Sauté for 4–5 minutes, stirring, until the onion becomes translucent and lightly golden. Add the minced garlic and sauté for another 30–45 seconds, until it becomes fragrant — be careful not to burn it.

Use a heavy-bottomed pot to prevent the ingredients from burning. You will recognize the onion is ready when it is translucent and soft, but not brown. Sauté the garlic briefly — burnt garlic gives a bitter taste.

Add the chopped zucchini and potatoes to the pot. Sauté for 5–7 minutes, stirring occasionally, until the pieces are slightly softened and release their juices. The goal is to gently sauté, not to brown the vegetables.

Stir with a wooden spoon every 1–2 minutes to prevent the vegetables from sticking to the bottom. They should be slightly soft on the outside but still not too cold on the inside — this way they will retain their fresh flavor.

Pour the vegetables with 800 ml of warm vegetable broth, bring to a boil over high heat, then reduce the heat and simmer for 15–20 minutes. The vegetables should be completely soft — check with a fork: the potato should be easily pierced.

Use a lid to speed up cooking. If the broth is from a cube, make sure it is well dissolved and not too salty before adding it to the pot.

Turn off the heat and let the soup cool slightly (about 2–3 minutes) to prevent splattering while blending. Then use an immersion blender (or transfer in batches to a countertop blender) and blend the soup until smooth. Blend in pulses until there are no lumps and the consistency becomes silky.

Use a hand blender with high-quality blades; hold the blender steady and gently move it around the pot for even blending. If you are using a countertop blender, blend in batches and be careful with hot liquids (first, slightly open a small window in the lid).

Pour 400 ml of coconut milk into the blended soup and gently heat over low heat for 2–3 minutes — the goal is to combine the flavors without allowing it to boil (boiling can cause the coconut milk to separate). Taste the soup and season with salt (about 5 g) and pepper (2 pinches) gradually. Add 15 ml of lemon juice, stir, and taste to achieve a balanced acidity.

Use a silicone spatula to gently stir. If the coconut milk separates, lower the heat and stir vigorously — usually, the consistency returns after a few minutes of stirring.

Finishing and serving

Transfer the soup to bowls or soup plates. On top, place 3-4 bacon chips (crumbled or whole), add a teaspoon of sour cream if using, and sprinkle with finely chopped dill. The presentation should combine the smooth, green cream with the crispy, golden bacon and the fresh green accent of dill.
