Mix with a fork until the yeast dissolves. Set aside in a warm place for 8–10 minutes: the mixture should foam up and a fine froth should appear on the surface — this is a sign of the yeast's activity.
In a large bowl, sift 300 g of wheat flour and add a pinch of salt (1 g). In a separate bowl, whisk 2 eggs (120 g) with the remaining milk (220 ml) and 30 g of sugar; if you are using a vanilla pod, cut it lengthwise and scrape the seeds, adding them to the liquids. Pour the yeast mixture into the flour, then pour in the liquids and mix with a whisk or wooden spoon, starting from the center and gradually incorporating the flour until a thick, smooth batter with the consistency of thick cream forms.
Cover the bowl with a cloth or plastic wrap and set aside for 30–40 minutes in a warm, draft-free place. The dough should rise noticeably and become covered with air bubbles — this will make it fluffy when fried.
Cottage cheese filling
In a small bowl, mash 200 g of cottage cheese with a fork until smooth. Add 20 g of sugar (from the remaining 50 g) and 10 g of lemon juice. If you are using a vanilla pod (optional), add a bit of vanilla seeds. Mix until the filling is creamy but not runny — it should be scoopable with a teaspoon.
Honey Cream Mousse
Pour the chilled 30% cream (200 g) into a chilled bowl. Whip with a mixer on medium speed until it starts to thicken (about 1–2 minutes). Gradually add 60 g of honey and 5–10 g of lemon juice, continuing to whip until soft peaks form — the mousse should be fluffy, shiny, and hold its shape when the whisk is lifted.
Frying
Place a pan over medium heat and pour in 30–40 g of rapeseed oil. Wait until the oil is hot — test: drop a bit of batter in; it should sizzle and spread quickly. Using a tablespoon, place portions of batter (about 2–3 tablespoons of batter for each pancake) onto the heated pan, adding a teaspoon-sized portion of cheese filling in the center of each, and cover with a thin layer of batter. Fry for 2–3 minutes until the edges set and no wet spots appear on the surface, and small bubbles form. Flip with a spatula and fry for another 1.5–2 minutes until golden on both sides.
Finishing and serving
Place the fried pancakes on a metal rack or paper towel to drain excess fat. On each pancake, put a teaspoon of honey-cream mousse and a few fresh raspberries.
