Preparation steps

Preparation

Take the eggs and cream out of the fridge at least 20 minutes in advance so they are closer to room temperature (this will make whipping easier). Measure all the ingredients. Prepare: a large mixing bowl, a small bowl for activating the yeast, a whisk or mixer, a lemon zester, a 26–28 cm frying pan, a spoon for scooping the batter, and a kitchen towel.

Use a large, wide bowl (at least 3 l), a frying pan with a diameter of 26–28 cm with a non-stick coating is best suited for frying single pancakes. If you don't have a scale, prepare a measuring cup; however, a scale provides the greatest consistency.

Cake

Pour 80 ml of warm milk (it should be 35–37°C — pleasantly warm, not hot) into a small bowl. Crumble fresh yeast (15 g) into the milk and add 10 g of sugar (from the total of 50 g). Mix with a fork until the yeast dissolves. Set aside in a warm place for 8–10 minutes: the mixture should foam up and a fine froth should appear on the surface — this is a sign of the yeast's activity.

Use a heatproof or glass bowl; check the temperature with the inside of your wrist (no more than 37°C). If there is no foam after 10 minutes, the yeast is inactive — start over with fresh yeast.

In a large bowl, sift 300 g of wheat flour and add a pinch of salt (1 g). In a separate bowl, whisk 2 eggs (120 g) with the remaining milk (220 ml) and 30 g of sugar; if you are using a vanilla pod, cut it lengthwise and scrape the seeds, adding them to the liquids. Pour the yeast mixture into the flour, then pour in the liquids and mix with a whisk or wooden spoon, starting from the center and gradually incorporating the flour until a thick, smooth batter with the consistency of thick cream forms.

Use a whisk or mixer hooks on low speed; do not mix for too long — just enough to combine the ingredients. The dough should be sticky but hold its shape when scooped with a spoon.

Cover the bowl with a cloth or plastic wrap and set aside for 30–40 minutes in a warm, draft-free place. The dough should rise noticeably and become covered with air bubbles — this will make it fluffy when fried.

It's best to place the bowl close to the hot oven (not on it) or on a windowsill in the sun. Don't overdo the rising time — too long can cause it to collapse.

Cottage cheese filling

In a small bowl, mash 200 g of cottage cheese with a fork until smooth. Add 20 g of sugar (from the remaining 50 g) and 10 g of lemon juice. If you are using a vanilla pod (optional), add a bit of vanilla seeds. Mix until the filling is creamy but not runny — it should be scoopable with a teaspoon.

Use a fork or a small hand mixer on low speed; if the cottage cheese is lumpy, pass it through a sieve for a smooth consistency. Additionally, you can add a few finely chopped raspberries for texture.

Honey Cream Mousse

Pour the chilled 30% cream (200 g) into a chilled bowl. Whip with a mixer on medium speed until it starts to thicken (about 1–2 minutes). Gradually add 60 g of honey and 5–10 g of lemon juice, continuing to whip until soft peaks form — the mousse should be fluffy, shiny, and hold its shape when the whisk is lifted.

Use a metal bowl and cold tools — the cold helps achieve a stable foam. Be careful not to overwhip the cream (when it starts to become grainy), as it would turn into butter.

Frying

Place a pan over medium heat and pour in 30–40 g of rapeseed oil. Wait until the oil is hot — test: drop a bit of batter in; it should sizzle and spread quickly. Using a tablespoon, place portions of batter (about 2–3 tablespoons of batter for each pancake) onto the heated pan, adding a teaspoon-sized portion of cheese filling in the center of each, and cover with a thin layer of batter. Fry for 2–3 minutes until the edges set and no wet spots appear on the surface, and small bubbles form. Flip with a spatula and fry for another 1.5–2 minutes until golden on both sides.

Use a wide silicone or wooden spatula. Do not set the heat to full power — too high a temperature will burn the outer layer, leaving the inside raw. If you are baking in batches, add a little oil between rounds.

Finishing and serving

Place the fried pancakes on a metal rack or paper towel to drain excess fat. On each pancake, put a teaspoon of honey-cream mousse and a few fresh raspberries. If desired, lightly dust with powdered sugar (optional). Serve immediately — best warm, in a paper cone (street food) or on a plate with an extra portion of mousse and raspberries.

Serve immediately after frying; the pancakes lose their fluffiness after sitting for too long. If preparing for a stand, keep the sauce in a cool container and add just before serving.

If the dough is too runny after rising, add 1–2 tablespoons of flour and mix briefly; if it's too thick, add 1–2 tablespoons of milk. You can add grated lemon zest to the cheese filling for flavor. Keep the remaining mousse chilled and serve fresh when guests arrive.
