Preparation steps

Preparing the groats

Rinse the buckwheat under cold running water in a fine-mesh strainer until the water runs clear. Place the buckwheat in a pot and add two measures of water (ratio 1:2 — that is, 160 g of buckwheat to 320 ml of water). Add 1 g of salt. Bring to a boil over high heat, cover with a lid, reduce the heat to low, and cook for 12-15 minutes until the water is absorbed. After cooking, let it sit for 5 minutes, then fluff with a fork.

Use a heavy-bottomed pot with a capacity of at least 1.5 l. The groats are ready when the grains are firm, not mushy, and the water is completely absorbed.

Filling - vegetables

Peel the onion and finely chop it. Peel the carrot and grate it on a medium grater or cut it into small cubes. Cut the zucchini and bell pepper into small cubes. Heat a pan (preferably 26-28 cm) with 1 tablespoon of rapeseed oil (15 g) over medium heat. Sauté the onion for 3-4 minutes until it becomes translucent. Add the carrot and sauté for 4-5 minutes until slightly softened. Add the zucchini and bell pepper, sauté for another 5 minutes until the vegetables are tender but not mushy. Finally, add the garlic pressed through a garlic press (15 g) and sauté for 30 seconds.

Use a wide non-stick skillet. Don't turn the heat too high — the vegetables should be sautéed, not burned. If the skillet starts to stick, add 1-2 tablespoons of water.

Filling - combining

Transfer the sautéed vegetables to a large bowl. Add the cooked and fluffed buckwheat (160 g), finely chopped dill (30 g), lemon zest and juice (about 60 g of lemon — grate 1/2 of the zest and squeeze the juice), 1 teaspoon of sweet paprika (4 g), and 2 pinches of pepper. Mix thoroughly with a wooden spoon or silicone spatula until the ingredients are evenly combined. Taste and season with salt (about 1-2 pinches from the remaining 3 g) to your liking.

Use a large bowl (at least 2 l). If the filling seems dry, add 1-2 tablespoons of cold water. The consistency should be moist but not liquid — easy to shape into rolls.

Cabbage leaves

Prepare the leaves: separate 8-10 of the largest cabbage leaves from the head. In a large pot, bring water to a boil. Immerse the leaves one by one for 20-30 seconds until they become flexible and easy to fold (be careful not to overcook). Remove with a slotted spoon and set aside on a cutting board to cool. Remove the tough veins (thicker core) by cutting them out with a knife — this will make rolling easier.

Use a large pot so the leaves can float freely. The leaf is ready for wrapping when it is soft but still holds its shape — if it becomes too soft and starts to tear, it has been submerged for too long.

Rolling and assembly

On each cabbage leaf, place 2-3 tablespoons of filling closer to the base of the leaf (the thicker part). Fold the sides of the leaf inward, then start rolling from the base upwards, gently tightening the filling. Arrange the formed rolls tightly in a baking dish or on a baking sheet lined with parchment paper. If you have a ring made of leaves or excess filling, spread it evenly. You can place a few slices of tomato between the rolls.

Use a cutting board and a sharp knife. If the leaves have thick veins, remove them to avoid cracking. The rolled rolls should be tight — do not overstuff them with filling.

Sauce and baking / grilling

Prepare a light sauce: blend fresh tomatoes (400 g) with 1 tablespoon of oil (15 g), a pinch of salt, and pepper in a blender. Spread a thin layer of sauce on the bottom of a baking dish or on a baking sheet. Arrange the rolls tightly and pour the remaining sauce over them. You can bake in the oven at 180°C (top and bottom heat) for 20-25 minutes until the sauce slightly reduces and the rolls are heated through. Alternative: wrap the rolls in aluminum foil and grill for 12-15 minutes on each side over medium heat, removing the foil in the last 3-4 minutes to achieve a lightly browned crust.

For baking, use a baking dish measuring approximately 20x30 cm. If you are grilling, cover the rolls with foil to prevent the filling from drying out. Check the internal temperature — the rolls are ready when they are warm inside (use a thermometer or test one).

Finishing and serving

After baking/grilling, remove the rolls and let them rest for 5 minutes. Before serving, sprinkle with finely crumbled cottage cheese (optional 100 g) and toasted sunflower seeds (optional 30 g) as well as fresh dill. Serve with lemon wedges or with natural yogurt mixed with a bit of garlic for dipping.

Use a sharp knife to cut in half if you want to showcase the colorful interior. Additionally, you can add cottage cheese and sunflower seeds to enhance the flavor/texture.
