Activating the yeast: in a small saucepan, heat the milk to a temperature of 35–37°C (it should be pleasantly warm, not hot — check with the inside of your wrist). Crumble the fresh yeast into a bowl, add 15 g of sugar (about 1/2 tablespoon), pour in 100 ml of warm milk, and mix with a fork until the yeast dissolves. Set aside for 8–10 minutes in a warm place. The surface should foam and a light 'cap' of foam will appear — this is a sign that the yeast is active.
