Prepare all the ingredients. If the shrimp are frozen, thaw them in the refrigerator for a few hours, then remove them from the packaging and dry them thoroughly with a paper towel (moist shrimp will not brown nicely). Wash the bell pepper, remove the seeds, and cut it into pieces about 3–4 cm wide (so they can be easily skewered). Grate the lemon zest using a fine grater (only the yellow part), then squeeze out the juice.

Use a large cutting board and a sharp knife for the bell pepper. It's best to dry the shrimp on a kitchen towel for at least 5–10 minutes to absorb the marinade well. A typical piece of bell pepper for the skewer should be similar in size to the shrimp.

Marinade

In a large bowl, combine canola oil (30 g), juice from half a lemon (about 50 g from the squeezed part), grated lemon zest (from about 1/2 lemon), pressed garlic (10 g), smoked paprika (2 g), salt (5 g), and black pepper (2 g). Mix vigorously with a fork or whisk until the ingredients form a smooth emulsion. Taste the marinade — it should be distinctly lemony, slightly salty, and a bit spicy from the pepper.

Use a ceramic or glass bowl — metal may react with lemon. If you don't have a lemon zester, use a fine grater. A hand whisk is best for mixing.

Place the shrimp in the marinade: add the shrimp (600 g) to a bowl with the prepared emulsion. Gently mix with a silicone spatula or spoon for 1–2 minutes, ensuring each shrimp is lightly coated with the marinade. Set the bowl in the refrigerator for 15–20 minutes — no longer than 30 minutes, as the acidic marinade will start to 'cook' the shrimp and change their texture.

Use a shallow dish so the shrimp can lay in a single layer. Do not marinate for longer than 30 minutes — the result will be rubbery. If you don't have a refrigerator on site, store the dish in a cool thermal bag.

Soak the skewers in water for at least 20 minutes before threading (to prevent burning). Alternate threading: a piece of bell pepper (about 3–4 cm), one shrimp, bell pepper again, shrimp — so that each skewer has 4–5 shrimp and 3–4 pieces of bell pepper. Leave a small gap between the ingredients so that the heat from the grill can cook them evenly.

Use wooden sticks or metal skewers. Thread the shrimp by the tail (if they have shells) or through the thicker part of the body to hold them securely on the skewer. If the shrimp are large, 3 per skewer will be enough.

Grilling

Preheat the grill to medium-high heat (about 200–220°C). If you are using a charcoal grill, wait until the coals are covered with gray ash. Place the skewers on the grill and cook for 2–3 minutes on one side until the shrimp turn pink and slightly curl, then flip and grill for another 2 minutes. The total grilling time is usually 4–6 minutes — the shrimp are ready when they reach an opaque, pink color and a firm (not tough) texture.

Use tongs to turn, not a fork. A medium-sized grill pan or rack works best. Do not leave the skewers unattended — shrimp can burn very quickly. If you are unsure about the temperature, test one shrimp before placing the rest.

Finishing

Transfer the cooked skewers to a plate. Just before serving, drizzle with fresh lemon juice (from the remaining half of the lemon, if available) and sprinkle with finely chopped parsley (if using). Check the seasoning and add a little more salt if necessary.
