Honey-Mustard Sauce
In a small bowl, combine mustard (60 g) with honey (60 g) and a tablespoon of apple cider vinegar (15 g). Stir vigorously with a spoon until the ingredients come together into a smooth, glossy sauce. Taste and adjust seasoning with a pinch of salt (1 g) and a pinch of pepper (1 g) if needed.
Caramelized apples
Peel the apples (450 g), remove the cores and cut them into quarters, then slice into pieces about 1 cm thick. Cut the onion (150 g) into thin feathers. Heat 25 g of butter (half of the butter from the recipe) with 1 tablespoon of rapeseed oil (15 g) in a medium pan — the fat mix will prevent burning. Add the onion and sauté for 3-4 minutes until it becomes translucent and slightly soft. Add the apples, 25 g of butter (the rest), 1 tablespoon of honey (about 15 g from the previously set aside honey), and thyme sprigs (a few leaves, the rest for decoration). Sauté over medium heat for 6-8 minutes, stirring occasionally with a wooden spoon, until the apple slices turn golden and partially break down — they should be soft but retain their shape.
At the end of frying, add 1 teaspoon of apple cider vinegar (about 5 g, part of 15 g) and gently mix — the vinegar will cut through the sweetness and enhance the flavor of the apples. Taste, season with a pinch of salt (1 g) and a bit of pepper (1 g) if needed. Remove the pan from the heat and discard the thyme sprigs.
Grilling
Preheat the grill (charcoal or gas) to medium-high heat. Grease the grill grate with a brush and a small amount of canola oil (about 15 g). Place the sausages on the grate and grill for 3–4 minutes on each side, turning every 2–3 minutes, until the skin is evenly browned and clear grill marks appear. The total time depends on the thickness of the sausages — they should reach an internal temperature of about 70–75°C (can be measured with a thermometer).
Assembly and serving
Slice the bun (240 g) in half and lightly toast it on the grill for 30–60 seconds, until the edges are slightly crispy. Place a leaf of iceberg lettuce (about 30–40 g per serving) on the bottom of the bun, layer with grilled sausage, and top with 2–3 tablespoons of caramelized apples. Serve 1-2 tablespoons of honey-mustard sauce in a small bowl on the side. Garnish with freshly chopped parsley (optional) and serve grated horseradish as a spicy addition.
Cleaning and Safety
After grilling, wait for the grill to cool down, then clean it with a grill brush. Residues of fat and honey burn quickly, so remove them while still warm. Wash the pan, bowls, and tools with warm water and dish soap.
